In Italian, “va piano” means “go slow.” As a restaurant, Vapiano on M Street encourages its patrons to heed that advice, taking the time to savor each glass of wine, piece of bread, and plate of food, especially when you’re dining in the company of family or some friends from Yale West.
Here, diners walk around the perimeter of the room and custom order their food from several different chefs’ stations. To make things easier and more sanitary during these interactions, though, no money changes hands—you’ll just pass along a Vapiano card that will track your order until you’re ready to leave. This payment system also eliminates the stress of dividing up the check among large parties, which are common at the restaurant’s long, family-style oak tables.
